Is there a way to access the history of all the chapters you've read? I feel like since they're greyed out in the story map it's saved somewhere but I don't know how to check
As far as I can tell, there's no feature yet. But a good way to do so is to like every chapter you come across, or simply bookmark them. The former option can be accessed in your "recent activities" but that's all I have to say.
The information is stored in the database but it isn't possible for users to directly access that information. (Other than seeing the chapter grey or blue in the story map.) The recent activities got cleared a few months ago for technical reasons.
