Something I don't see much FtM transformation

I'd say, further, if you're unable to do what I described above, if you're unable to examine, use, and describe different likes aside from your own or that might even contradict your own, that is far more limiting than not finding 'dudes' to be sexy.

Characters can have their own likes and feelings, things that an author should be able to empathize with, examine, play with and mold, even if that same author doesn't personally share those same likes, dislikes, or feelings.

I would say the big reason is the demographic split. Hell from what I have read from authors who make money through Amazon Self Publishing the biggest fetish with women is being "Taken" by a rich powerful and handsome man. Not something I personally care for but whatever.(although considering what I write about I can hardly say I am any better)

I can say I have wondered what it would be like to be a guy but I avoid writing gender bending stories because I find it hard to avoid the very cliched standards of the genre. There are so many times you can read "I am suddenly a woman and hungry for unending dick" in variously dragged out forms before I throw in the towel. Really a story from the female side would maybe be interesting if it was something like "Girl has crush on gay guy so wishes he would love her and awakes the next morning as a dude." otherwise it is just the same as the MtF.

FtM transformation reminds me of the movies She's the Man with Amanda Bynes and The Hot Chick with Rob Shneider. Both were entertaining and cast a realistic portrayal of a woman either masquerading or transformed into a man and their interactions with others. The relationship between Bynes and Channing Tatum's character was amusing because of how confused Tatum's character got about his own sexuality. A similar thing happened with Schneider's character and her best friend played by Anna Faris, whom started to fall for Schneider's male persona. These weren't sex romps, but they did lead to interesting dynamics which could easily lead to something more erotic. Whether it's appealing to everyone is doubtful, but I'd say it's storytelling gold that hasn't really been mined yet.

I really don't get that genre.
It ships with the bad taste of "buy a girl", at least for me.
(How impressive can it be to impress a girl with materialistic things if you're rich like hell?)

I'm sure it's got the same sort of appeal as being 'taken' by a confident and sexy woman. Pure primal wish fulfilment.

well the first thing you should know about this genre is that the guy almost always wants a woman who is described as normal, plain, and boring so bad that he will do anything to convince her and she always resists him for a long time going back and forth on if she likes him at all until he does some crazy romantic and super expensive thing that makes her love him.

    Oh, I get that part.

I just don't understand why they have to be rich and powerful.

So it is rather "buy a boring girl"?

The same reason people dream of winning the lottery or being a king or queen. People like the idea of not having to have any kind of responsibility but still living in luxury. Consider that in most of them the trade that is being made is "You are basically a sex slave but you won't be asked do anything that you really don't want to do and the things you don't want to do you will actually find you enjoy. In return you will get to live a life of absurd luxury and the man you will have to fuck is handsome and charming anyway."

More the female version of "Nerd becomes sex master" or the various versions of that trope. Its wish fulfilment pure and simple. I think another part is also the slight thrill of knowing that you really shouldn't be ok with basically being "owned" by a man. Its the kind of subversive thrill that is just edgy enough that housewives will think they are being naughty but not so extreme that they would actually worry about others finding out about it.
