Well, I don't know how it works for where you live, but in Canada, only one party needs to consent to the conversation being recorded. There's no expectation of privacy between two regular people.
The only concern legally might be an invasion of privacy. However, The site and stories are completely anonymous so I don't know how one would argue that in a Court of Law. Also, I would be only posting the best ones I've found, so it's not like I would be trying to publically shame someone for it.
Privacy is rather quite underrated...
But in your case "the other part" is anonymous, so I don't see an issue there.
Besides, no site or story makes you completely anonymous. It's just a matter of cost-benefit ratio. (So it is much more likely that you would get problems if your chat partner was underage.)
