I tend to only come across the ones that focus on one gender being dominant

Well, one gender, one race, sometimes two for one.

I've seen three now, mayhaps four and I'm misremebering.

Or a story about a random lottery that turns plebs into gods, so everybody just starts their own chapter about a particular protagonist with a specific identity being the top in that Chapter chain.

But then everybody gives their protagonists names like "Pat Walker," so you have to click through to all the Chapter 2s even pick which New World Order you want to read about.

If only they'd each written their own stories, with a nice, obvious, self-explanatory title.
