Contemplating doing something similar with a minor character in my story, just cause I want to give an upcoming character a dumb joke name and his first name's already taken.

I gotten away with a lot of sneaky edits. Some might call it poor form, but I have no regrets.

It's a lot of effort sometimes to not change the text of one of my more popular chapters to some Vogon poetry or something

I did this once. A character was briefly mentioned in an early chapter. Some time later, I started writing down information for every character in the story, and made a slight error with her name. Then, the character became more important, and I kept using the slightly wrong name. When I noticed my mistake, I just changed the initial mention instead of confusing up-to-date readers.
